Heirloom Tomato Gazpacho

Ingredients:

3 heirloom tomatoes
1 cucumber (peeled)
1-2 cloves garlic (depending on how much you like garlic)
1 bell pepper
2 1/2 cups tomato juice
1/4 cup lemon or lime juice
1/2 cup cilantro or flat leaf parsley
Salt and pepper to taste

Optional: lite sour cream and fresh herb sprigs for garnish. Add jalapeño peppers for an added kick!

To prepare:

Wash and chop all vegetables; seeds are not invited to this party. Blend the cucumber, tomato, bell pepper, garlic, tomato juice, and lemon juice together in a food processor, but keep things relatively chunky. If you want to make it smoother, that’s entirely up to you. Rough chop your cilantro with a good knife and fold it into your vegetable mixture. Season with salt and pepper, chill, and serve! Serves 4-6.
