If your grandmother’s pumpkin pie recipe could potentially pack in more calories than a cheeseburger, it may be time to try this delicious, low calorie pudding! It will give you all the joy of pumpkin pie, with a quarter of the calories.
Ingredients:
2 eggs
2 cups of pumpkin puree*
1 can (12 oz) evaporated milk
3/4 cup brown sugar
1 tsp vanilla extract
2 tsp pumpkin spice – or nutmeg, cinnamon, ginger, and clove in equal parts
1/4 tsp salt

To Prepare:
Preheat oven to 350 and spray six ramekins with nonstick cooking spray.
Combine all ingredients in a large bowl and portion equally into the ramekins—spray additional ramekins to fill as needed.
Space the ramekins apart in a deep dish cooking pan and cover the base of the pan with water. Place in the oven for 40-45 minutes and serve when warm!
